This recipe is the best blend of sweet and spice combined with the calmness of rice. Sweet Corn Pepper Rice is a power packed meal for your family. Pepper being the best cough and cold medicine, treat it naturally with this yummy recipe.
Sweetcorn or maize or corn are good supply of vitamins, minerals, antioxidants and full of energy i.e. carbohydrates. Moreover it is very good for eyesight. Not only for elders but also for kids, sweetcorn is a eyesight protector. Adding of pepper in masala helps take care of cough or cold issues.
This can be given to 10 months and above baby (if you have introduced spices and chewable solids) or else give it to 12 months +. Makes a great Breakfast and Lunchbox Recipe.

SWEET CORN PEPPER RICE for Toddlers, Kids & Family

Ingredients
For Paste
- Pepper - 2 tsp
- Ginger & garlic paste - 2 tsp
- Cashew - 15-20 soaked
- Green chilli - 4
Other Ingredients
- Clove - 4
- Cinnamon - 1 inch
- Rice (washed) - 2 cups
- Milk - 2 cups
- Water - 2 cups
- Ghee/ oil - 5 tsp
- Pudina - 15-20 leaves
- Salt - to taste
Method
1. Take a blender. Add soaked cashews, pepper, ginger & garlic paste, green chillies and make smooth paste.
2. Heat oil / ghee in a pressure cooker, add cloves, bay leaf, cinnamon. Stir it for a minute.
3. Now add the cashew - pepper paste, a pinch of salt and stir it continuously, until cooked / oil oozes out for about 5 minutes. The paste may stick to the bottom of the pan, ensure to keep stirring it.
4. Add sweet corn and mix well and fry for 2 minutes.
5. Add washed rice and mix it for 2 minutes until all masalas are well coated.
6. Now add water and milk and salt.
7. Mix well and add generous amount of pudina leaves.
8. Close the lid and pressure cook until 3 whistles. Allow to cool down add little more ghee if required and mix and serve.
9. Serve Sweetcorn Pepper rice hot with raita if required
