Eggs are a complete balance of fats, they are rich in protein, Vitamin D and contain good amount of Omega 3 Fatty acids. The other main ingredient in this recipe is Poha which is loaded with healthy carbohydrates, rich in iron, gluten free and its quick cooking ability makes it most favored too. In this Scrambled Egg Poha I’ve used very minimal ingredients and this can be made for breakfast, lunch or dinner very easily. This also makes for a healthy snackbox option.
Eggs can be offered to babies after 8 months. However as only egg yolks are suggested for babies till an year, you can make this recipe using egg yolks for babies. I liked the way the combination of Poha and Scrambled egg getting adapted to Indian spices so well. You can also give it an talianI twist by adding oregano, chilli flakes or italian herbs.

Ingredients
- Egg - 2
- Poha - 1 cup
- Oil - as needed
- Curry Leaves - few
- Onion - 1/2 chopped
- Tomato - 1/2 chopped
- Capsicum - 1/2 chopped
- Pepper / Chilly Powder - 1 tsp
- Turmeric Powder - 1/2 tsp
- Salt - as needed
- Coriander leaves - for garnishing
Method
- Rinse and leave poha in a strainer for a while without the need of soaking, for grainy poha. If you want very soft poha soak it for just 2 minutes and strain and set aside.
- Take a pan add oil, curry leaves followed by onion and tomato.
- Once all the above are well cooked add whisked egg in the centre making a well. Allow it to sit for a minute or two and then mix all the ingredients.
- Add the spices now. I'm adding turmeric powder and chilly powder here. Mix and fry all the ingredients well for a minute and then add poha.
- Mix it well, cover and cook in simmer for about 2 minutes.
- Scrambled Egg Poha is ready to be served.

Note :
- For babies below a year you can make this with only egg yolk
- Adjust the spices as needed.
- You can make soft poha and mash and serve for babies if needed.
