Potato Sooji Pancake is a savory pancake with a combination of Potato, Sooji, and Indian spices making it difficult to stop at one. After trying this recipe I realized how potato added an amazing taste and the energy boost it gives to little tummies. Potato Sooji Pancake can be made in a jiffy and tastes yummy and this can be given to babies post 8 months without salt.
Pancakes are way easy to prepare and are always my go-to option on a hectic morning as breakfast or an easy snack on stressful evenings. I’ve posted a lot of pancake recipes that are made with minimal ingredients. I find them ideal for babies and kids as they are soft, thick, and hence make for a great finger food option.

Potatoes are rich in carbohydrates and dietary fiber and hence assist in healthy weight gain. They help in bone development and are rich in Vitamin C which is good for the skin. Choline present in potatoes helps improve sleep, memory, and learning in younger children.
Many avoid using potato in kids’ food thinking it is gassy, but offering in moderation along with other spices from our pantry like cumin or ginger will rule this out and it has many advantages to offer so you may not deny offering henceforth.

Ingredients
- Rava/ Suji - ½ Cup
- Potato - 1 Boiled
- Rice Flour - ½ Cup
- Carrot - 1 Grated
- Onion - Chopped
- Coriander - Little Finely Chopped
- Chilly Powder - 1 tsp
- Turmeric Powder - ½ tsp
- Garam Masala - 1 tsp
- Salt - As Needed
- Water - As Required
Method
- TakeRava in a thick bottom pan and dry roast it for about 5 minutes and transfer it to a plate and allow it to cool.
- Meanwhile, take boiled potato in another bowl. Ensure it is well cooked, and then mash it with the help of a potato masher.
- To the mashed potato, add rice flour and roasted Rava.
- To this, add Onions finely chopped, grated carrot, and chopped coriander leaves followed by all the spices. Here I’m adding turmeric powder, chili powder, garam masala, salt.
- Bring in all the ingredients together by mixing. Now add water a little at a time to make a batter. Ensure the batter is of idli batter consistency and not too runny.
- Once the batter is ready, close the lid and rest for 30 minutes. Later, check if the visible consistency is perfect, add water only if it is thickened too much.
- Heat the pan, add a few drops of ghee and pour the batter for a thick pancake. Do not spread like Dosa batter. Cook well by closing the lid, flip and cook on both sides. It will be crispy on the outside and soft on the inside.
- Potato Sooji Pancake is now ready to be served, Enjoy it with ketchup.
