Panjiri or Panjeerior Dabrais an amalgamation of superfoods– all dry fruits like Almonds, Pista, Cashewnuts, Makhana, Whole Wheat, etc. This winter food is a high energy snack basically made as a Prasadam during Janmashtami or SatyanarayanaVrat. Panjiri is considered extremely healthy during pregnancy and post-delivery as well.

Panjiri is good for postpartum healing and is a great lactation food that is perfect for providing nourishment and energy to new moms. It acts as a great source of nutrition during Pregnancy too. Panjeeri can be given to toddlers post 2 years in small quantities. Panjiri is a great winter food too. One or two spoons is recommended for all in the family to boost immunity during the days of winter when one can easily catch a cough, cold, or various infections.

Panjiri – Special Winter Food for New Moms and Family

Panjiri or Panjeeri or Dabra is an amalgamation of superfoods – all dry fruits like Almonds, Pista, Cashewnuts, Makhana, Whole Wheat, etc. This winter food is a high energy snack basically made as a Prasadam during Janmashtami or SatyanarayanaVrat. Panjiri is considered extremely healthy during pregnancy and post-delivery as well.

Ingredients

  1. Wheat – ¼ kg
  2. Jaggery / Coconut Sugar – 50 gms
  3. Ghee – 50 gms
  4. Watermelon Seeds – 1 tbsp
  5. Raisins – 25
  6. Almonds – 25
  7. Walnut – 25
  8. Makhana – 12
  9. Gondh – 25 gm
  10. Dry Ginger Powder – 1 tsp

Method

  1. To prepare Panjiri, at first we need to roast dry fruits in ghee. It is always good to roast dry fruits separately. This method may take time, but Panijiri will turn out perfect in its taste and will taste authentic. We will be starting with Badam/almonds in a wide pan with ghee, once roasted keep it aside on a plate to cool. Follow the same step for pista.
  2. In the same pan, the above procedure is to be followed with cashew nuts, walnuts, raisins. This completes the roasting of all dry fruits. Next with some more ghee roast makhana and keep it aside.
  3. Roast watermelon seeds carefully with ghee and collect all of the dry fruits in one plate.
  4. Now pour more ghee to deep fry gondh or tragacanth gum. Initially, gondh will look like a small crystal substance and fluff up post frying.
  5. Once the gondh is fried well, it looks like a white small ball highly bigger than its original size. Now collect that in the same plate to cool down.
  6. Now in a wide pan, add whole wheat flour and ghee roast it well until it turns golden brown, and smells good too. To this you can add natural sweetener, here I am adding Coconut Sugar which is not only healthy also enhances the taste. Alternatively, you can use any normal jaggery or sugar powder.
  7. Add Dry Ginger powder and mix well by switching off the flame. Now keep ready all the roasted nuts by crushing them with the help of a mortar and pestle. It is good to crush dry fruits to add crunchiness to the recipe, if not you can powder it too.
  8. Add all the roasted and crushed dry fruits, makhana, watermelon seeds, gondh to the wheat mixture and mix well. You can keep it in a glass jar for daily use! 
  9. Delicious and Nutritious Panjiri is ready to be relished.
