Ingredients

  1. Almonds - 200 gms
  2. Kesar - 5 Strands
  3. Cardamom - 2
  4. Palm sugar - 100 gms

Method

  1. Take a wide thick bottom pan, add water, and bring to boil. Once the water starts boiling add the almonds and blanch it for about 2 to 3 minutes.
  2. After the specified time, check the almonds for readiness. You should be able to peel off the skin easily by squeezing in between two fingers.
  3. Strain the water and transfer the blanched almonds to the plate. Rub it with a thick towel to get rid of extra water and remove skin immediately.
  4. Once cooled, remove the skin of the almonds. Take a thick bottom pan and add the almonds dry roast for about 2 minutes.
  5. Add cardamom along with almonds and dry roast along for about a minute, transfer it to a plate, and allow it to cool.
  6. Transfer the cooled almonds to a blender jar add a few strands of Kesar and Palm Sugar. Palm sugar has a unique taste and is the healthiest sweetener option. You can purchase it on our TOTS AND MOMS STORE.
  7. Blend the mixture, turn on, and turn off the mixer at regular intervals to avoid the almond powder getting oily. Blend it to a smooth mixture and store it in an airtight container for future use. Remember both almond and jaggery have moisture so the mixture will be coarse. Sugar must be used for fine powder but it never recommended for babies.
  8. Almond Jaggery powder is ready to be used in different forms.
